Bellini is the stylish cocktail bar at the Hilton Auckland and is one of the chicest venues in town. Named for the famous Prosecco-based cocktail, created at Harry’s Bar in Venice, the drinks are very much the thing here. These guys know how to mix a cocktail. Need proof? Try a Bellini Iced Tea, a potent, peach-tinted take on a classic or their Molecular ‘Si Way’, an award-winning agave-based cocktail. Other signature drinks include the inventive First Day of Autumn, which includes vodka and muddled figs in its ingredients, or the splendidly named, vodka-based Eye-Gouge, though traditionalists can enjoy one of the menu’s classics with a twist, such as Poached Apple and Elderflower Martini or Feijoa and Pear Moscow Mule. (If you’re impressed by the bar tending talent on offer, the venue also holds cocktail making classics to indulge your inner mixologist). Sip your drink in the chic pale surroundings while soaking up the stunning views. The bar’s enviable location gives it a beautiful backdrop of the Auckland Harbour, which is particularly striking at night, though in the daytime all those floor-to-ceiling windows give the place a beautiful, airy feel. Bar snacks come care of the same team behind the cuisine at the Hilton’s White restaurant think tapas, burgers, moules and frites (though we’d be tempted by the Munch and Crunch just for the name alone a tasty selection of prawn spring rolls, squid rings, onion rings and crumbed Camembert, ideal for sharing). They also serve an exemplary afternoon high tea. It’s open all day, 7 days a week.
