Inside the highest bar in the south west of England, you will discover a drinking and dining destination that is all about style, class and wonderful coastal vistas. Level8ight, housed within Bournemouth’s Hilton hotel, is sleek and modern, accented with highlights of teal, gold and beige. The outdoor terrace is welcoming and the perfect place to sip a few of the bar’s creative libations, fine wines or premium spirits, all while overlooking the rooftops of the seaside town. Level8ight’s mirrored bar, illuminated by some impressive chandeliers, hints at the repertoire of spirits that the mixologists are working with when they infuse their cocktails. Many are modern takes on classic concoctions and include regionally-sourced ingredients and even Bournemouth based spirits (such as the delightfully dry local gin). Bar staff are particularly proud of the Bournemouth Pier Martini – vodka, Italian aperitif, rhubarb liqueur, lemon juice, rhubarb bitters and vanilla syrup, served with rhubarb and custard candy floss – and the Tregonwell Gin Fizz, named after a smuggler who bought Bournemouth town centre in 1810, which muddles gin and sloe gin with mango cream egg white, yuzu and rose soda. The food menu at Level8ight includes small sharing plates and afternoon tea, all creatively-designed to reflect the changing seasons and delicious local produce. The truffled polenta chips and crab tacos pair perfectly with the sea views and sumptuously soft velvet armchairs, meaning that you may simply never want to leave.
