There are many things about the Brighton seafront we like – the sea, the pier, the tang of vinegar in the air – but we have to admit it’s lacking in destination bars and restaurants. The Hilton Metropole has joined forces with guys behind popular The Coal Shed to create something really special. Seafood is a big deal here – the menu features platters of shellfish, cuttlefish fritters, and lots of lovely lobster cooked over charcoal, with nods to Asian flavours, like zingy kimchi slaw. The space has been handsomely revamped, the bare brick arches and wooden walls bedecked with framed prints of the West Pier. There’s a wide seafront terrace planned for the summer months, which sounds like the ideal place to drink a crisp glass of wine when the sun shines on Brighton, which we gather it does sometimes. Cocktails include the Lemon a blend of Aperol, Raspberries, Prosecco, and Lemon Salt, the does-what-it-says-on-the-tin Savoury, a blend of Thyme infused Vodka, Smoked Salt, and Oil Pearls, and the cheeky Hanky Spanky, a blend of Gin, Sweet Vermouth, Fernet, and Hazelnut Aromas. The drinks list also features a selection of Bloody Marys as well as an array of G&T variants and lovely large choice of wines.
