What is better than sipping on a cocktail after a long day while watching the sunset over the ocean? Not much, if you ask us, especially when the cocktails are handcrafted with such precision. Developed around the nautical adventures of fictional character Neil Halverson Hilton, a friendly Admiral of the British Navy during the mid-1800s and distant relative of the founder of the Hilton brand, Conrad Hilton, the cocktail menu evokes Caribbean sunshine, tropical rainfalls and rum-loving pirates. The approach is playful, and you will likely hear a different backstory for every drink each time, but the staff makes it easy to have a good time listening to their tales while sipping on these creative concoctions.
Try the Message in the Bottle, a swanky take on the Old Fashioned served in an ice ball you need to hammer down (with an actual little hammer) before sipping. The focus isn’t only on the theatrics, although we always find these enjoyable. Each drink is precise and joyful, the flavors blending with the perfect combination of style and craft. Feeling the tropical vibe? Opt for the Passiflora, a fun-inducing beverage created with 10yo Laphroaig, ginger wine, passionfruit, limejuice, vanilla agave and champagne. Sweet and tangy, the flavors are never too overbearing and make for a perfectly balanced drink.
