The distillery-bar hybrid is becoming quite the thing in Chicago. One of the newest, in Logan Square, is a family-owned operation, located on a block that’s also home to Revolution Brewing, and Gaslight Coffee, lots of lovely things in a very small space. The Chicago Distillery boasts a tasting room where you can sample their local spirits at the moment they only offer a low-proof vodka and a white whiskey, though they’re planning a lot more – either as a neat drink or used as the basis of a classic cocktail. You can order your Dark & Stormy or your Gimlet and then take it with you as you explore the facilities and see the distilling process in action. The tasting room shuts its doors at 11pm so you may want to have other plans to round out your night so it’s fortunate then that there’s so much of interest happening in this part of town. A gin, a bourbon and a rye are all on the cards, or rather in the barrels, so it’ll be worth checking back in when these become available. Spirits are available to buy and their informative weekend tours and tastings are well worth booking. Opening hour are limited so do check their website.
