Located below the perennially popular Pops for Champagne, The WaterShed is a parlour room dedicated to the ever-growing field of craft beers as well as to a great range of artisanal spirits from the Great Lakes region. The basement space with its lounge chairs and brick walls looks kind of like the basement in someone’s house, albeit someone really cool. Many of the beers are local in origin. Craft brews from Illinois includes Goose Island, Two Brothers and Metropolitan but they also stock Ohio’s Great Lakes, Michigan’s Brewery Vivant and Wisconsin’s Furthermore. Much of their wine is also locally sourced though they also serve a small range of sweet and fortified wines from Spain and Portugal. Their range of seasonal and limited bottlings changes regularly and they also serve a range of cocktails made with artisanal spirits, like the Negroni Palladio, a blend of Watershed Bourbon Barrel Gin, Gran Classico, and Dolin Dry Vermouth, and the Phenomenal Genius, a beer-tail made with New Holland Bourbon, Yahara Bay Coffee, Grapefruit Cordial, and craft 5 Vulture Beer. There’s a good range of snacks, sharing plates, cheeses and charcuterie should you fancy a bite to eat.
