The ambitious CH Distillery is the city’s first distillery which comes with a cocktail bar attached. Founders Tremaine Jackson and Mark Lucas are distilling their own spirits in-house and the bar allows you to taste the fruits of their labour: vodka, gin (two types), rum and whiskey. It’s a smart space, all plum and slate, raw concrete and glass, minimal but just the right side of austere with a stylish contemporary vibe and a series of tiny light-bulbs dangling above the bar. As you sip your cocktails you can see the mechanics of the distillery, the various gleaming vats, dials and ducts, the shiny and industrial pipework. The drinks list includes original tipples care of consulting mixologist Kyle Davidson, of Blackbird fame drinks like the smoky, aromatic Oxycontin, a blend of Lapsang Suchong-infused gin, ginger syrup, honey, and lemon, as well as house twists on classic drinks like the Bloody Mary and the Pegu Club. Other house infusions include serrano chili vodka and cinnamon vodka, the latter showcased in the potent Czech Mate.There’s a compact but decent food menu full of seasonal small plates, charcuterie, and cheese, which pair well with the creative cocktails. The whitefish spread on black rye is well worth sampling, ditto the beet and gin-cured gravlax (gin-cured anything scores points in our book). The Provencal garlic almonds are seriously addictive too.
