This stylish drinking den is the brainchild of Stephan Hinz, one of Germany’s top bartenders and author of Cocktailkunst. The drinks here are seriously creative, blending unusual ingredients together to make the kind of cocktails you won’t find anywhere else, in Germany, let alone Cologne. His concoctions feature things like salmon-gin and eucalyptus and he has a whole mixology laboratory next door. The blending of drinks and food is high on the agenda here and the resulting drinks are complex, occasionally challenging, but always wary of your attention. Classic cocktails are also available if you’re wary of all this molecular experimentation, but it would be a shame to miss out on drinks of this level of invention. The room is sleek and dark and smart – black leather bar stools, filament bulbs, the back-bar like a shrine -and the bartenders are happy to talk about their process and the various ingredients they’re using. This is the place to come if you’re serious about cocktail mixology and want to see a bartender at the top of their game pushing back the boundaries when it comes to flavour.
