The stylish Parliament boats a menu of over 100 craft cocktails. It’s an attractive and plush lounge, dimly lit and dapper with a bordello vibe which we can totally get on board with. Local bar-star, Lucky Campbell resides behind a bar which is well stocked with brown spirits and house-infusions. The place is already a contender for the best cocktail spot in Dallas and the inventive menu includes drinks like The Killing Thyme, a blend of gin, cucumber and thyme is a stand-out drink.
There’s the obligatory Barrel Aged Old Fashioned and house specials include the Hydro-Tonic, a blend of strawberry-shishito pepper infused gin with lime and Fever Tree tonic, the Banksy, a blend of citrus gin, egg white, lime, ginger, allspice, blackberry, and, erm, ‘spray paint.’ There are molecular concoctions aplenty but they know their cocktail history too. They make a mean Blood and Sand and a top notch Ramos Gin Fizz, a drink which dates back to the 1890s. The list is vast and covers whisky, gin and absinthe-based tipples as well as an array of after-dinner drinks including a sweet Pistachio Flip and a Cupcake Martini with whipped cream and sprinkles. And, while they don’t yet serve food, they do let you order in from nearby State and Allen.
