Stunning Peruvian dishes and sultry pisco sours abound at Coya, a Latin American-inspired restaurant and lounge bar within the Four Season Resort, Dubai.

Upon walking down the greenery-lined wooden bridge that leads to COYA, you’d be forgiven for thinking that it couldn’t get much more impressive or striking. Of course, you’d be wrong. Inside, COYA houses a dramatic dining room filled with intricate lighting, wrought-iron partitions, marble pillars, sleek leather banquettes and plush olive green velvet dining chairs. It’s all really quite glamorous and impressive, just like the restaurant’s Latin American-inspired menu, which is packed with ingredients like ox heart, scallops, truffles and Peruvian beans. COYA even boasts a “ceviche counter” – a counter facing an open kitchen, where a select few lucky (or just early) guests get to watch the chefs prepare dishes with finesse. In terms of drinks, COYA serves them up in its own “Pisco Lounge”, which, as the name would suggest, specialises in cocktails mixed with the Peruvian spirit (like the Hemingway at Coya – dark rum, pineapple-infused pisco, cherry, grapefruit and lime). There’s also a few modern takes on the classics thrown in there for good measure, such as the Jumeirah Collins – gin, grapefruit, watermelon, lychee, orange blossom and tonic – along with a mind-boggling selection of high-end spirits to create your own tipple. And those in the Pisco Lounge need not feel left out in the culinary department, for there’s a tasty bar food menu available featuring tacos, empanadas and small seafood plates. Photo credit –
