This place is properly atmospheric. Located in the underground vaults of the Westin Hotel, a series of granite columns surrounds a central wood-panelled bar. Mint is a seriously handsome spot in which to sip a cocktail and the bar serves some of the best in Dublin, including a selection of bottle-aged personalised cocktails and innovative atomised gin and tonics. There’s a lot of goodies to choose from. A bottle-aged Cock and Bull blends Jameson Select Reserve Irish whiskey, Combier Elixir, maraschino liqueur, Pernod Absinthe, Regan’s Orange Bitters and Peychaud’s Bitters. We also like the sound of the Mystic Garden, a mix ofBeefeater 24 gin, Aperol, apricot brandy, green tea syrup, Fee Brothers grapefruit bitters, sage, fresh lemon juice and a Pernod Absinthe rinse. The bar serves a great range of classic cocktails – an Aviation, a Hemingway Sour, and one of our favourites, the French 75 – as well as a wide range of wines. The food menu features bar food classics, a quality burger, a club sandwich, Caesar salad and the like, and there’s regular live music including some of the best jazz and swing in Dublin.
