The bar at the glamorous Edinburgh boutique hotel, Tigerlily, has become a destination in its own right. It’s a stylish, opulent space, one of the most distinctive on George Street the home of Edinburgh’s smartest bars. The interior is full of vast mirrors and glittering chandeliers. The drinks list is exciting and lengthy featuring both an array of classics and more innovative concoctions, like their signature drink, Lily’s New Knickers (yes, that is what they’ve called it), a pinkly potent blend of vodka, rose liqueur, pink grapefruit juice, almond syrup, grenadine and lemon sherbet foam. Those with a sweet tooth may wish to try the Fool’s Gold, an aromatic blend of rum, crßme de menthe, fresh pink grapefruit juice, jasmine syrup and home-made honeycomb, while Tommy’s Lagerita (‘for the fellas’, apparently) is a mix of tequila, fresh lime juice, agave syrup and wheat beer. Finish the night with a Newie Tuesday, a blend of cognac, tawny port, pistachio syrup, mole bitters and ‘pistachio fairy floss’. Bottle service is available if you’ve booked a table your spirit of choice served with your choice of mixers and garnish – and if you’re dining in the restaurant area, a cocktail trolley enables drinks to be mixed table-side, a nicely theatrical touch. Downstairs there’s a cellar area turned dance floor, for extending your evening (hotel guests can queue-skip with a flash of their room keys). The crowd tends to be young and affluent, out to see and be seen, as you might expect.
