If you didn’t already know, the “angel’s share” is the 2% of whisky that evaporates while it matures in a barrel. And if you didn’t know that then this is the right spot to visit if you’re a Scotch neophyte. A grand selection of the golden nectar is on offer – over 100 – with an emphasis on Single Malts (and some helpful instructions on hand on whether to drink with ice, cut with water or neat). Further demonstrating its devotion to whisky is a hefty 210 liter barrel of 17 year old Glenlivet 1995, from which attentive bar staff can draw a dram or two. The bare brickwork and muted mid-tones make it a comfortable if uninspiring place to sample something from the cocktail list, which rests itself mainly on the shores of Scotland. However there are some intriguing Asian twists among the selection of  Old Fashions, giving an indication this is part of local bar impresario Charlene Dawes’ Tastings Group of Hong Kong trad-with-a-twist watering holes, that also includes Quinary and Ori-Gin. Food runs along the lines of the gastropub variety-  think fat chips, mini wagyu burgers and risotto balls  for light snacks. While a few steps from the thick of things along Wyndham Street, it’s a shame it’s stuck on the second floor of an anonymous building with only a clunking lift by way or entrance. But that could be a good thing if you want a quite drink, space to appreciate the complexity of the good stuff and a relaxed atmosphere.
