Quinary’s “Multisensory Mixology” pushes cocktail-making into the future.

Taking a page out of El Bulli’s book, Hong Kong’s Quinary skillfully reinvents the art of the cocktail with an innovative food-science approach that engages all five senses – or what they like to call Multisensory Mixology. Headed by multi award-winning mixologist and co-owner Antonio Lai and star bartender and bar manager Samuel Kwok, the bar has consistently been voted one of Asia’s and the World’s 50 Best Bars.

Playing with perception, flavor and science, Quinary has crafted an exciting and pioneering experience taking molecular mixology to new heights. Here, flavor and aroma combinations come together in different textures, appearances, and even sounds. Cutting-edge techniques like rotary evaporation, centrifugation, freeze-dehydration, sous vide, and more are used to develop clean, intense flavors and elevate local ingredients. Whatever preconceptions you may hold about cocktails, you can leave them at the door. This is the cocktail bar as a laboratory: classics are given unexpected twists, original creations open new, uncharted horizons, and all your senses will be brought into play. Low-lit and minimal, the hip, contemporary urban space is furnished with leather stools and sofas, and little else. The real theatrics happen behind the bar – and in your glass.

Served in playful vessels, the 40-plus cocktails are as delicious as they are Instagrammable. Let’s start with the house signature, the sweet and sour Earl Grey Caviar Martini, which blends vodka, elderflower syrup, apple juice, Cointreau, lemon and lime, comes topped with a tower of Earl Grey foam, and is filled with bursting “caviar” tea pearls. The zesty and fragrant Lavender Meringue Pie features lavender re-distilled gin with limoncello and sweet marshmallow foam, topped with slightly torched lavender sugar and decorated with a dehydrated lemon wheel. On the other end of the flavor spectrum, the velvety/umami Quinary Sour pairs monk fruit and seaweed-infused whisky with sweet vermouth and homemade bonito liquorice syrup, topped with a spritz of bitters and bonito flakes.
