Award-winning mixologist John Nugent’s American cocktail bar and gastropub The Diplomat offers a drinking and dining experience perfectly suited to Hong Kong’s convivial personality. The intimate, 18-seat speakeasy pub reimagines classic cocktails and offers a selection of international dishes, making it ideal for small late night get-togethers. With elegant brown leather banquette seating, custom brass finishes, motif ceiling tiles and tinted glass, this small cocktail venue is equal parts cozy and sleek. The space is embellished with original art pieces by Ryan McGinley and Josh Sperling. Somewhere Place, a candid photograph by McGinley, depicts a surrealistic scene in a cinematic, dream-like composition. Moving into the bar, guests can come across the “Friend” mirror, Sperling’s latest collaboration with Case Studyo, which makes use of the artist’s iconic geometric shapes and vivid pop colors.
The golden light emanating from the bar wraps its surroundings in a dreamy atmosphere. Behind it, the expert team crafts high-end cocktails with vintage liquors. The Diplomat’s cocktail menu draws inspiration from influential state leaders, ambassadors, and historical figures, and each item comes with a fun backstory. Our personal favorite is the Adonis, with Suze, Fino sherry, dry vermouth, orange bitters and rose water. Another couple of highlights are the Tarling, made using pandan gin, white port, baking spice, clarified orange juice and coconut juice, and the Pearl, made with black coffee amaro, green chartreuse, Campari, pineapple, ginger and almonds. The bar also offers a range of carefully selected small batch wines. As for the food, the menu doesn’t lack in tempting options, such as the Black Truffle Mac & Cheese, the Suckling Pig Cubano or the Pommes Frites with Espelette Pepper.
