The spot that Blue Butcher currently occupies on Hollywood Road has seen various guises come and go over the years, including attempted superclubs Mint and Republik. It was starting to look like a poisoned chalice – until the arrival of Blue Butcher. Run by the team behind Play and Brickhouse, who are doing their bit to liven up the F&B scene in Hong Kong, Blue Butcher is unabashedly New Yorkian in its style and ambience. This ‘meat specialist’ is one of the best steakhouses in Hong Kong, and pays true attention to their cuts of meat, especially the craft of aging — there is a walk-in dry-aging cabinet prominently placed near the stairs — as well as, critically, the attendant cocktails.Special mention goes to the bartender’s original creations, including an apple-flavored, prohibition-themed concoction. They are not afraid to experiment, and in keeping with their aforementioned specialism, not adverse to introducing some animal protein into the drinks as well, with bacon washed vodka alongside horseradish-infused gin and other quirky flavorings, including matcha powder, sweet potato syrup and blue cheese foam. The wine list is substantial and well-informed, but tends towards the pricier choices.
The space is cavernous, especially by Hong Kong standards,, and dominated by large communal tables that run the length of the room, although it is divided up somewhat with the addition of little nooks, and a private room that can be curtained off with heavy drapes, should you wish for a more intimate setting.
