Late Night Drinking
May 11, 2018
A breath of fresh Hawaiian air in Honolulu’s hip Kakaako district, Bevy is home to a creative drink menu full of expertly crafted cocktails and a chic “island industrial” vibe. Priding itself on putting fresh takes on the classics and inventing soon-to-be-classics of their own, you may find yourself spending more time at Bevy than the beach. When most people think of Hawaii and Hawaiian cocktails, they tend to think of beach bars and Mai Tais, and if that is what you are expecting at Bevy, you will be tad bit confused by what you find when you get there. Not by the Mai Tai part, as they make a mean one. No, it’s the atmosphere and design of Bevy that’s definitely not what you would expect of a typical Hawaiian hangout. Bevy’s interior is a blend of warehouse-style concrete and dangling lightbulbs with only subtle nods to the islands in features like their lava rock wall. This is part of what makes the bar great though as it embraces the industrial and artsy neighborhood it’s located in, giving you a look at the real Hawaii. When it comes to the drinks, the man behind them is none other than esteemed mixologist Christian Self, and he has outdone himself with a menu that is constantly evolving but always impressing. Recent examples include the Bevy Margarita with blanco tequila, lime, and earl grey lavender agave, and the Sarsaparilla Julep, with rye, mint, and house made sarsaparilla soda.
