A truly unique bohemian drinking den in the heart of Ibiza Town, Bar 1805 is the brainchild of avant‐garde cocktail artisan Charles Vexenat, celebrating Absinthe and the artists, writers and philosophers who were inspired by the potent “green fairy”.
The bar’s name is a nod to Pernod Fils, the first recognisable brand of Absinthe, which was launched in 1805. In honour of the anchor found on its iconic bottle, Charles offers a classic French Absinthe drip to anyone presenting themselves at the bar with a genuine anchor tattoo.
For those without an anchor to flaunt, signature Absinthe cocktails include the Green Beast ‐ featuring lime, sugar and cucumber ‐ served in the bar’s signature birdcage. Hearty French canteen‐style food is available until 2:30am, including Special K Chicken Goujons, Massive Foie Gras Burgers and the house speciality, Moules Frites. The place is brimming with artistic flair and character, reflecting the playful personality of its creator, and every corner is filled with curios, from oil lamps and French children’s books to Charles’s personal collection of vintage cocktail shakers and glassware.
An exciting 2015 summer season promises an array of one‐off events featuring guest chefs and bartenders, street parties and much more frivolity. But hurry, it lasts just 180.5 days.
