Head down the stairs (the name’s a pun of sorts, an Italian take on cockney rhyming slang – think about it) and you’ll find a handsome subterranean Soho Italian restaurant, but if it’s just a drink you’re after we recommend perching in the small ground-level bar. Here they specialise in two of our favourite things. Prosecco which they serve on-tap. It’s growing in popularity as a way of serving fizz and means you can have a glass of quality bubbles for just £4 or a carafe for £11. But the real draw here is their superb array of vermouths. Their house-made vermouth is a good starting place, herbal, complex, not too bitter, but they also serve a huge range from around Europe and beyond, ranging from the sweet to the faintly medicinal, commercial brands and small-batch, white and red. There’s also a creative range of vermouth-based cocktails to choose from and of course a range of tasty Italian small plates care of the kitchen below.
