If the line of red penguins along the roof of the 21C Museum Hotel in Louisville didn’t give you a clue as to the eclectic nature of the establishment, the interior of its bar and restaurant, Proof on Main, most certainly will. Featuring a series of rotating contemporary art exhibitions, Proof on Main continues the theme of the modern hotel and offers an altogether unique drinking and dining experience.
The light and airy dining room of Proof on Main, punctuated with exposed brick walls and pieces of artwork and sculpture, provide the perfect backdrop for sampling the vast array of enticing food and drinks on offer. But let’s start with the drinks. Proof on Main’s best claim-to-fame is its selection of Kentucky bourbons (over seventy five, to be exact), including some rare and small-batch varieties that you don’t often see pop up on many bar menus. They also offer a range of bourbon flights for the uninitiated or adventurous, which allow you to sample three bourbons of different themes. The wine list is equally-as-impressive, featuring one hundred different international vineyard varieties, most of which are served by the bottle and have been selected to perfectly complement the food menu.
The range of contemporary cocktails has been lovingly-created by the in-house bar team and highlights the bar’s range of artisanal spirits. A couple of our favorites include the Bare Minimum (wild gin, raspberry, lemon, ginger, basil and bitters) and the Carolina Rose (apple brandy, house-made ginger liqueur, lemon juice, grenadine and bitters). As for Proof on Main’s food – you can either choose from a small but delectable bar menu or a full-blown meal from a range of a la carte menus served throughout the day, all created using locally-produced ingredients.
