Dynamic chef José Andrés has brought his signature inventive style to the cocktail bar at SLS South Beach, taking a whimsical and experimental approach to the classics. Playing with fresh herbs, fruits and vegetables, as well as more avant‐garde ingredients such as liquid nitrogen and organic emulsifiers, he has taken drinking at this popular poolside bar to a whole new level. Think Manhattans with liquid cherries and a martini with olive brine air. Some of the drinks are prepared at your table, adding an element of showmanship and drama to the whole affair. The snacks are pretty special too, with an emphasis on tapas, as you would expect from the man credited with bringing the “small plates” dining concept to America. Platters of Spanish meat and cheese, or some spicy patatas bravas, help those cocktails slip down even more easily. Located on the hotel’s generous outdoor covered patio, and overlooking the pool and the Atlantic Ocean, the bar’s comfy rattan chairs are perfect for sinking back into for an extended al fresco cocktail hour. And if the mood to party takes you, the hotel’s decidedly more lively Hyde Beach is just across the way.
