Cocktails matter. They matter. A sub-standard drink is one of life’s smaller but sharper disappointments. You see the glass, you grasp the stem and then you sip. And if the balance is off, if the flavors clash, then that little bubble of anticipation quickly pops. Such things don’t happen at LAB. Overseen by pro mixologists Fabien Maillard and Sam Dalcourt, the venue offers bartender training courses but is also open to the public. This is a bar that takes drinks seriously and the preparation of a drink can be a dramatic event; but while they like their dapper outfits and their flair, it’s never excessive. And the cocktails? Well, their Balsamic Berry, with vodka, strawberry puree and a good glug of vinegar, is a thing of beauty, and their Plantation Breeze, with gin, grapefruit and basil, is crisp and delicious.
