The talented chaps from Alchemy Consulting including former Death & Co bartender Joaquán Simó, the Tales of the Cocktail 2012 American Bartender of the Year have created a cool second-floor cocktail bar with a cosy, convivial atmosphere and the kind of drinks designed to tempt the most hard to please cocktail fiend. The compact menu will rotate regularly to reflect seasonal ingredients and to highlight whatever the bartenders happen to be working on. The details really matter here with ice shaped specifically for the glassware and house-made bitters, and the bar tenders and wait staff are the perfect mix of knowledgeable and friendly, always happy to advise on your drinks without being in-your-face overly attentive or pushy. Classic drinks are mixed with more ambitious creations like the Surabaya Sling, a mix of rum, lemon, and root beer bitters. We’d go for the splendidly named Death and Taxes (Dorothy Parker Gin mixed with Lemon, Plum Brandy, Lavender-infused Cinzano Bianco and Grapefruit bitters even the acid-tongued souse Ms Parker would no doubt approve). There’s also a chartreuse selection which patrons say is a must-try again, the cheerful bar staff are happy to advise. Drinks are plotted on a flavour spectrum to allow you to pick something that chimes with your taste, ranging from comforting to adventurous, refreshing to spirituous. There’s a range of bar snacks to soak up all that booze, curated by Beecher’s Handmade Cheese. Despite the venue’s popularity, it manages to be busy without seeming cramped or over-crowded, making it the perfect place to go with a group of friends or take a date you want to impress.

The bartender’s lips may say she’s not judging you for not knowing your dry from your dirty, but her eyes tell a different story.
