The Summit aims to bring an old school Vegas vibe to the East Village. The brainchild of one of the men behind the Minetta Tavern, this is a bar that Frank and Dean would have been at home in, a simple yet attractive space where cocktails are taken very seriously indeed. They serve the classics and also more creative ‘Alchemist’ drinks. From the latter section of the menu, you could pick the She Loves Me, She Loves Me Not, which includes Szechwan peppercorn infusion on its ingredient list, or The Apology, which features absinthe and walnut cordial. The drinks aren’t super cheap but for the area and the ambience they certainly aren’t overpriced, and you’re unlikely to feel short changed. Beers, wine and spirits are also on offer though the lists aren’t extensive, because here the cocktail is the star and the friendly, helpful bar staff are always happy to advise if you’re not sure what to go for. If you need to put something more solid in your stomach you can pick from one of their artisanal cheese or charcuterie platters. The décor offers bare brick walls (adorned with photos of the Rat Pack looking on approvingly), plush banquettes and warm mood lighting courtesy of chandeliers, creating an intimate vibe that makes it a great place to bring a date. Arrive early to be sure of getting a table the place is only open evenings and capacity is limited to 60 to ensure the place never gets too crammed (though if you can’t get in they’ll take your details and send you a message if space opens up).
