Former Bowery hang out Double Crown has been revamped and reopened as Saxon+Parole, an American bar and restaurant with cocktails literally – on tap. The space is as handsome as you’d expect given that it was designed by AvroKO. The old bar remains but the decor has moved away from its previous heavy Colonial feel in favour of a cleaner, more modern brasserie look. Equine touches here and there, such as a stylish wagon-wheel chandelier or the odd pile of horse blankets, are inspired by the bar’s name – Saxon and Parole were both 19th Century racehorses. The dining room boasts ornate wood-panelled walls and striking light fittings, and promises ß-grilled meats and aquatic delightsß- in abundance. There’s also a second atmospheric, bottle-lined space with wine glasses dangling from the ceiling as well as a slightly more casual bar area for sitting and sipping. House cocktails are hip and innovative, with ingredients including Parole Whiskey Saxon+Parole’s very own house brand of whiskey. Naren Young, the guy in charge of the drinks, cites the classic Tom Cruise movie Cocktail as the catalyst that set him on the path to a career behind the bar. He’s worked at joints around the world, winning a clutch of accolades along the way, and every month he creates a limited selection of bottled cocktails especially for Saxon+Parole. Patrons who are feeling a little flush can buy one of these bottles, or cabinet cocktails, which are then kept under lock and key, ready to be brought out whenever their proud owner makes a visit to the bar.
