The Royalton has upped their game. In the space that used to be known as Brasserie 44, the stylish new offering utilises the services of star bartenders Richard Boccato (whose impressive CV includes Dutch Kills and Pain Killer), as well as Willy Shine (another face from Painkiller), Misty Kalkofen, and Eric Alperin. This stellar team has helped turn this handsome, if somewhat masculine, lobby space into a real destination for cocktail fans. The Cocktail Collective’s menu is agreeably on trend with a focus on pre-prohibition drinks and homage is paid to famous hotel bars around the world. The Hotel Nacional blends rum with pineapple, lime and egg white while the English 75 is a mix of gin, lemon juice, raspberries and rose water, topped with a splash of champagne. They also, rather brilliantly, have a separate dedicated punch menu.
