Isle of Skye is a Williamsburg whisky-lovers paradise from the team behind Caledonia. The basement bar is somewhat hidden away down a set of stairs. Inside you’ll find a room of atmospheric stone arches, dark wood, and a fireplace; the walls adorned with the red lion of Scotland and the bar boasts some of the comfiest, coolest Chesterfield sofas in town. Snag a spot on one of those and you’ll never want to leave. The Scottish theming, fortunately, isn’t too heavy-handed and the focus is very much on the drinks. Their whisky list is extensive, almost dauntingly so, with over 130 different kinds to choose from. The focus is on single malt Scotches, with selections from Islay and Speyside amongst them, but they also stock a good range of Japanese and French labels, plus plenty a nice line in bourbon and rye. They serve an intriguing range of whisky-based cocktails, including the Rabbie Burns, which is mixed with orange bitters, Benedictine and a splash of Doulin Rouge. If whisky’s just not your thing, try the Royal Mile, a mix of gin, cucumber, lemon juice, and tonic with a sprig of rosemary. There’s a decent, well-chosen wine list and they also serve a good range of craft beer. The bartenders really know their whisky and are happy to offer some guidance if required.
