Paris-Bastille and the Marais

This hip new bar rucked above the oh so cool Beaucoup is well worth visiting in its own right. Whether you’re looking for an after dinner drink or a couple of cocktails in a low-lit atmospheric space, Demon with its sheepskin-covered chairs and striking black and white jungle print walls is a good place to idle away a few hours. The bar serves a range of classic cocktail as well as a selection of house creations the flavour combinations are often interesting and unexpected, making use of house-made ingredients and an eclectic array of spirits. They have literary leanings at Demon, and the stories behind the drinks are part of the pleasure of the place, an exercise in liquid history. Drinks of note include L’enfer et chocolat, a smoky sweet mix of mezcal, vermouth blanc, Amaretto, chocolate bitters and Angostura, and the Beaucoup, a Tequila based drink with a citrusy Cointreau and yuzu twist. They serve a nice line in tapas-type snacks if you’re hungry too. All their cocktails are attractively presented and the intimacy created by the solo barman puts us in mind of the cocktail temples of Tokyo. Attention to detail is high on the agenda here and the drinks are always attractively and carefully presented, while the atmosphere is attentive but not overbearingly so.
