There’s been a lot of talk of Thomas Abramowicz’s culinary journey – this dude moved to Texas to learn about the art of building and running an authentic smokehouse. The Beast is the result of his research, a proper American-style BBQ joint in the middle of Paris. It also boasts an epic bourbon selection, something of a rarity in this city. Abramowicz also spent time in Kentucky so he knows his stuff and he’s chosen some pretty special bottles for his bar. There’s a range of over 50 to choose from, including some real rarities, and you’ll be hard pressed to find a larger collection in the capital. The bar here is dedicated to drinking the stuff straight (though at nearby Copper Bay bar they fat wash bourbon with grease sent over from The Beast if you want to see what happens when the two flavours combine). Beef is a big deal here, slow smoked brisket and ribs, but there’s also some exemplary pulled pork and inventive sides. The room is simple but convivial with long wooden tables, the staff affable and if bourbon’s not your thing – and if not why not – they also stock a range of craft beers and natural red wines.
