The innovative restaurant and bar on the fifth floor of the Palomar Hotel focuses on cocktails and food and the relationship between them. Savoury ingredients play a large role in the mixology. From the drinks list, the Drop and Give Me Twenty is a good place to start, a punchy yet vibrant blend of blanco tequila, pear and Fresno chile shrub, lemon, hellfire bitters, making for a drink with a spicy edge. Tea and Crumpets blends Beefater 24 gin with Earl Grey tea, thyme, pierre ferrand dry Curacao, fresh juniper, thyme, and orange marmalade. The Dirty Decision makes use of Chanterelle mushroom infused amontillado sherry. The Loveable Trickster pairs Absolut vodka, raspberry gum, olive oil, lemon. Raspberry jam, lemon peel, spiced olives, and vanilla cream. From the food-menu, the sweet and spicy chicken wings are essential. But the grilled quail and the house burger are also well worth trying.
