Frolik Kitchen + Cocktails, located on the fifth floor of the Red Lion Hotel, is a shiny stylish new place occupying the former Terrace Garden Restaurant space. The 127-seat bar and restaurant is nattily designed with a faintly retro interior, all striped carpets and lounge chairs in bold 1970s colours (these guys love a pattern). The real draw here is an expansive outdoor patio area offering glorious views of the Puget Sound. There’s a ‘gaming zone’ where shuffleboard and ping pong can be played, large LCD screens surrounded by comfy armchairs for chilling in front of a game, and an outdoor fireplace for those evenings when the weather needs a bit of a helping hand. Chef Shailu Salian’s menu uses local ingredients to create Pacific Northwest dishes, including bourbon bacon popcorn that’s seriously moreish. Bartending consultant Mike McSorley, who’s also worked for Tavern Law and Tini Bigs, has developed cocktails and the 24-foot-long bar is framed by floor to ceiling windows so you can savour the view along with your drink before a round or two of shuffleboard.
