Nothing to do with the Donna Tartt novel – though we’d totally go to that bar – Seattle’s Goldfinch Tavern is the new space at the Four Seasons, a very different one to the hotel’s former ART Restaurant. The place has undergone something of a transformation. It’s got a bit of a Mad Men vibe now, very sleek and elegant. The dinner menu – care of Mkt.’s Joe Ritchie – is particularly big on seafood and local ingredients, well-sourced meat – they’re strong on good quality beef with a huge range of cuts. Cocktails are mainly classics or twists on classics, also made with quality ingredients and there’s an excellent wine list.
