A celebrated Singapore cocktail bar, 28 HongKong Street located at 7RQW + 2Q Singapore, is certainly not undiscovered, but may take a little finding. Without any fuss or fanfare, it’s hidden behind the unremarkable exterior of an old shophouse, but devotees of the one true cocktail will always discover the best, no matter how well hidden. Inside, it’s shiny and sleek, with mellow lighting and invitingly secluded booths. There’s a relaxed American-style urban chic ambience with US-style cocktails named after rappers and a musical menu of pure hip-hop classics. The well-heeled clientele of leisured locals and sensation-seeking visitors are all here for the main attraction, and that is the cocktails.
Complex and creative concoctions are served up by award-winning bartender Zdenek Kastanek. They include the modest mule, based on lemongrass-infused vodka, ginger beer, and aromatic herbs; and the New Orleans-inspired 6 Foot 7 Foot, a rum and cognac blend served with a slice of caramelised banana and an aroma of absinthe. For those who prefer something lighter, 93 ‘til infinity is a fruity, fresh blend inspired by the San Francisco bay area, made from Campo de Encanto Pisco with lime, pineapple and cypress.
Bar food is also American-style with classic comforts like mac and cheese balls or for a Singapore-Mexican blend of flavours, the Pandan Churros are a favourite. But these are not standard bar bites, everything is made from scratch and designed to be a perfect accompaniment to those awesome cocktails.
