Inspired by old-style New York City glamour, the Manhattan bar in Singapore brings a vintage taste of the Big Apple to the ultra-modern island city state.

Low-lit and high end, the dramatic marble and oak of the entrance really sets the scene in this Singapore bar. The decor is a plush take on a speakeasy, with early 19th century touches. Sitting above a sea of leather armchairs and sofas, the bar here houses an array of wines and spirits, including many rare bottles. Located within the Regents Hotel, the Manhattan is an ode to the Golden Age of Cocktails.

This Singapore drinking hole, specialises in drinks for the connoisseur, with the price tag to match. Lovers of complex, creative libations will pay for the sheer sensorial experience, embodied by the venue’s signature drink, the New York Sour: port and bourbon flavoured with maple syrup, lemon and bitters, made creamy with egg white.

The Manhattan boasts the world’s first in-hotel rickhouse where its mixologists age entire cocktails in casks, adding rich smoky undertones throughout the process. For a barrel-aged take on the old fashioned, try the bonfire: mezcal sous vide with maple syrup, cherry tobacco bitters and smoked meats. For more ash-tinged tones, mad men blends Balvenie Double Wood with St. Germain, black walnut bitters and Perrier-Jouët Grand Brut, cooled by an ice cube stamped with the Manhattan logo. And for utter sweet smokiness, try coal: 12-year-old single malt whisky, dark chocolate liqueur and dry curaçao over hand-carved ice.



This Singapore hotel bar’s food is tantalising, too. Try the liquor-soaking Ahi tuna fried dumplings or bread and butter pickles. For dessert-meets-ornate-artwork, indulge in the Big Apple cheesecake, with its miniature apples atop a chocolate-laden base, or the knickerbocker popsicle; beer sherbet beneath white chocolate and edible flowers.
