Dry Land has quite a pedigree. Owner Roy Leibowitz hails from dinky Darlinghurst favourite Love, Tilly Devine, and his staff have put in the hours at Koi and Grasshopper. This new Redfern bar is slightly larger than Tilly but it’s equally rich in character: a narrow room with candle lit tables and an all-vinyl playlist. The décor takes second place to the cocktails and bar snacks, both of which are superior specimens. These guys know how to mix a drink and the bar is particularly well stocked in tequila and rum. If you’re hungry, their burgers are already gaining a reputation and the houseß-made pork scratchings are just begging to be munched alongside a cool beer or two. The place’s popularity is such that it can get pretty rammed at weekends.
