Situated in the Hilton Sydney hotel, the opulent and historic Marble Bar dates back to 1893. It’s a gloriously theatrical space, light filled and deeply atmospheric, with deep green marble pillars providing an added accent of drama to an already beautiful room. Sun streams through the atrium, illuminating the breathtakingly ornate interior, a carefully renovated triumph of the high Victorian style, with a dash of contemporary cool completing the picture. Now celebrating their 120th anniversary, the heritage-listed bar has lost little of its wow factor. The ceilings are high, there’s art on the walls, and the whole place exudes character. There are few classier places to sit and sip a classic Champagne Cocktail. The Marble Bar serves a range of classics – including a Cuban Barrel Proof Mojito made with Havana Cuban Barrel Proof Rum as well as a range of signature drinks. The Marble Bar Martini is made with gine, Drambui, DOM Benedictine, kaffir lime leaves, Angostura Bitters, and elderflower syrup, while the Kentucky’s Secret blends rye whiskey, pomegranate syrup, sugar and Angostura Bitters. There’s a small but decent range of Australian wines available, but we can’t help but feel there’s something about a place as grand as this which demands a glass of fizz. There’s live music most weekends which just adds to the appeal.
