A striking speakeasy in the heart of Sydney, Palmer & Co serves both cocktails poured with precision and an authentic slice of Prohibition-era life.

Inspired by both the peculiarities of the the taxidermy shop that used to call its address home and the sophistication of Prohibition-era speakeasies, Palmer & Co brings unique vintage style and cocktails to Sydney. 

Hidden underground off Abercrombie street, Palmer & Co impresses thoroughly on first sight. As you descend the venue’s steps, you are whisked away into a world of days gone by, a world full of bespoke vintage touches, eclectic oddities, and hushed drink orders. The exposed brick walls create a cavernous feel to Palmer & Co, with assorted taxidermy touches on the walls in addition to black-and-white portraits, low candlelight, vintage tiles, and a show-stopping cabinet full of curiosities under a painted retro sign that reads “Tonics – Cocktails – Tipple – Cordials Tinctures”. 

As fantastic as the bar looks, and the gently-wafting jazz sounds, the drinks taste even better. Seasonally-focused and freshly shaken with the finest ingredients, the cocktails are all presented beautifully in vintage glassware by a staff that looks like they have just stepped off the screen of Midnight in Paris. A few of their signatures are the sharp La Petite Gironde – reposado tequila infused with saffron, French aperitifs, honey, citrus and aromatic bitters – the herbal Gin & Bell – homemade bathtub gin, peppers, and vanilla shrub, dry vermouth and citrus – and the smooth as silk MoanInglorious – premium aged whisky, rhubarb and pineapple shrub, egg white, citrus, seltzer and hints of smoky peat. This, of course, is only a little sample of the libations on offer, as Palmer & Co proudly serves classics (some long forgotten) and cutting edge tipples as well, in addition to a tasty food menu.
