The Morrison Bar & Oyster Room

In place of the old Brooklyn hotel, stands the charming Morrison bar and Oyster room. The charming restaurant and oyster bar is perfect for an intimate evening or big event. A centrepiece of wooden beams and glass panels stands stylishly at the heart of this bar. It has a modern New York feel with mural patterned tables and black leather bar stools. The bare brick walls contrast the glass elegantly and twinkling fairy lights hang over head. Out in the conservatory you can have some fresh air on those stuffy days and enjoy the sun shining overhead while sipping a cool cocktail.
The menu here is elaborate with the choice of seeing your oysters and seafood cooked in front of you. Their oysters come with over 30 Australian varieties but in particular their speciality is the angass oyster. Chef Sean Connolly likes to cook all meats on the bone and he’s done something special with the grass fed eye fillet (on the bone) by surrounding it in Chinese broccoli and green peppercorn sauce. We suggest that whatever you choose, you try the side of duck fat chips!
The Morrison bar have classic cocktails such as the Brooklyn and Manhattan as well as mixing up a pretty special dirty martini. Their signature cocktails however, is the deliciously zingy ‘sweet rhubarb’ which is a blend of rhubarb agave and pomegranate.
