Replacing Harmony, the Intercontinental’s rather insipid hotel lounge, Proof is a much hipper prospect than its predecessor and a welcome addition to the lively nightlife scene in Yorkville. The revamp has left it looking mighty dapper, clad in warm browns and greens, with a white granite bar providing a focal point at its centre and sleek cream sofas. Large windows open onto hip Bloor Street West. The crowd is an equally stylish mix of sophisticated twenty and thirty something professionals who gather here daily for after work cocktails and a bite to eat. Vodka is the order of the day here and they stock a huge variety from all around the world, divided into four different categories – Standard, Deluxe, Premium or Must Have. You can either opt for a cocktail or go the bottle service route of you feel like pushing the boat out. Known for its spot on martinis, Proof also does some more exotic cocktails, such as Proof Crush Abslout Mandarin, freshly squeezed orange and lemon juice and a splash of red wine, poured over crushed ice and Proof Passion Absolut Peach, peach schnapp, mango, cranberry juice and soda. The food menu is heavily Spanish influenced, with a tempting range of tapas style small plates available if you get peckish. And on Saturday nights their resident DJ does his thing, turning this into something of a weekend party spot. Their outdoor space, Skylounge, is a chic oasis from the bustle of Bloor Street, serving seasonal summer bites and cocktails.
