    Mixologist Pete Vasconcellos created the Old Pal Spencer as a variation on the Old Pal, which is itself a twist on a personal favorite of his, the Boulevardier. "The Boulevardier is definitely an industry cocktail," he says. "It was all I wanted to drink when I first got into bitter spirits like Campari." For the Old Pal Spencer, he swapped out rye for bourbon and used sweet vermouth rather than dry to create a softer, slightly sweeter, more approachable cocktail for all night sipping.

    • 1 part Aperol
    • 2 dashes Angostura Bitters
    • 2 parts Virgil Kaine High-Rye bourbon
    • 1 part Dolin de Chambery Rouge Vermouth

    Stir for 30 seconds over ice. Strain over a large ice cube. Garnish with orange twist.
