Pumpkin Spice Old Fashioned
Combine 1/2 oz pumpkin spice syrup, 2 dashes orange bitters and 1 orange wedge into an Old Fashioned glass and muddle. Add 2 oz bourbon, 1 large ice cube and a splash of club soda (optional). Stir gently with a cinnamon stick to combine, and leave it in as a garnish.
For the pumpkin spice syrup:
Add 1 cup water and 3/4 cup light brown sugar to a saucepan over medium heat. Stir and let simmer the sugar dissolves. Lower the heat and whisk in 3 teaspoons of pumpkin pie spice and 1/3 cup pumpkin puree. Simmer on low for 7 to 10 minutes, checking and stirring frequently. Remove from heat and let cool. Once at room temperature, strain through a fine-mesh sieve or strainer, stir in 1 teaspoon vanilla extract, and store in the fridge in a tightly sealed container for up to 1 month.
Lion’s Tail
Combine 2 oz bourbon, 1/2 oz allspice dram, 1/2 oz lime juice, freshly squeezed, 1 teaspoon simple syrup and 2 dashes Angostura bitters into a shaker with ice. Shake well until cold, strain into a coupe or cocktail glass, spritz the oil from an orange twist over the top and serve.
Spiced Mai Tai
Combine 1 1/2 oz white rum, 1/2 oz lime juice, 1/2 oz orange juice, 1/2 oz triple sec and 1/2 oz five-spice syrup in a cocktail shaker with ice. Shake to chill and strain over crushed ice into a highball glass. Float 1/2 oz aromatic bitters on top and garnish with star anise and a sprig of fresh rosemary lit on fire right before serving.
